Bison Tartare

Quantity Ingredients Yield: 4 Portions

  • 350 g 12 oz. Bison, chopped fine
  • 15 ml 1 tbsp. Shallots, chopped fine
  • 30 ml 2 tbsp. Balsamic vinegar
  • 15 ml 1 tbsp. Fresh sage, chopped
  • 15 ml 1 tbsp. Fresh chives, chopped
  • Salt and pepper to taste.

Preparation Method:

  1. Mix all ingredients together until just combined. (Do not over mix).
  2. Chill and form into desired shapes.
  3. Arrange on plate with assorted leaf lettuces. Garnish with whole fresh herbs.
